Why PO should be worried about Predictability, Scope change during a sprint, Wastage, Defect instead of Story/Story instead of defect, Story pointing etc... if team is doing whatever he wants to do?

Because the team isn't there to do "whatever he wants to do".

In Scrum, there are professional accountabilities. For example:

- the Developers are accountable for quality, including the absence of defects.

- the PO for his or her part, is accountable for the value provided to stakeholders, including the predictability of future deliveries and the minimization of waste.
